The Frittata. Gwyneth calls it a Boyfriend Breakfast. I call it, another really easy, don't even have to look at the recipe, recipe.
Hello again friends. This week I’m sharing with you another recipe. A breakfast I remembered existed last year-ish when Vogue posted a video of Gwyneth Paltrow, decked in pink Gucci mesh, making one for her “Boyfriend Breakfast” series.
I have never cooked while wearing pink Gucci mesh or any mesh or any Gucci for that matter. This is a ‘roll out of bed’ breakfast. This is a ‘what do I even have in my house’ breakfast. As long as you’ve got 6 eggs and some kind of milk, you can make this. I always use a base of onion and some garlic if I have it. Sweet potatoes, kimchi, spinach, prosciutto, turkey, literally any kind of cheese, these all make for a great frittata. This is user-friendly, hard to mess up, easy to love and you’ll probably have left overs. We call them, egg pizza, because…it’s sliced like a pizza…and you like…can eat it straight out of the fridge cold? Anyway, I hope you make and enjoy!
Use a cast iron skillet. Mine is 10 in.
Ingredients
Basic Frittata Recipe:
6 large eggs, for a 10 inch skillet, may need a couple more eggs for a bigger guy.
¼ cup milk, I use half and half bc that’s usually what I have but use anything milk-like
4-5 garlic cloves, minced, divided in half, use more or less, I love garlic
1 small onion, chopped, or several shallots (can be red or white or yellow onion)
¼ teaspoon sea salt, but like, use your judgement, I don’t measure, I heavily sprinkle
Olive oil for coating the pan
Literally any other ingredients that sound good to you, I’d estimate about 1/4 cup of each to sprinkle in
Preheat your oven to 425 degrees.
Warm your cast iron. Once it is hot, add your olive oil and heat that for a moment until warm.
Add onion and sprinkle with salt, get this sizzling and cooking down and then add half the garlic. You want to get these pretty soft and on the edge of browning.
While the onion and garlic cook, crack 6 eggs into a bowl and whisk them together with the milk and the other half of the garlic. Add a little salt. (sorry to be vague but salting is such a personal thing)
Once the onions are nice and soft, spread them into a layer on the bottom of the skillet, like an onion blanket. Now, layer in your other ingredients. Sprinkle cheese and meat and kimchi and potato (pre-cook these a bit if using), whatever concoction you’re creating. Make sure to evenly distribute ingredients around the pan so each slice of frittata has some of the good stuff. Add another sprinkling of salt and let that all simmer together for about a minute. If adding spinach, do it last. I usually add a spinach blanket on top of all the other goodies.
Give your egg mixture a swirl to get all the garlic that’s settled mixed in and then pour it evenly on top of all the layers in your skillet. With a hot pad or something to grip your skillet handle, give your pan a shake to get all the egg down and around the sides and bottom. Then pop the whole thing into your preheated oven. My magic number is 18 minutes but depending on your oven, cook times may range from 16-20 minutes. If it’s browning around the edge and looks done in the middle, you’re good to go. Sometimes a hump will form in the middle but it’ll settle down, don’t panic.
Let that baby cool for a second after you pull it out. Slice it like a pizza. Enjoy!
